Ingredients | 材料 :

300g  Walnut | 核桃 半斤
pinch of salt | 小許鹽 
3/4 tablespoon honey | 蜜糖 3/4湯匙
 30~40g  Caster sugar | 砂糖
  8g  Sesame | 芝麻
50g  Water | 水
  5g  Unsalted butter (optional) | 無鹽牛油

1. wash walnut in running water, soaked in boiling water with little salt until first boil

2. drain

3. dry with paper towel

4. bake in 180C for about 15 minutes until golden/brownish

5. put sugar and water in frying pan in medium high heat

6. until small bubble appears

7. until big bubbles appear, turn to medium low heat until color turns to dark brown

8. add honey, stir until dissolved

9. throw in walnut and butter (optional), stir quickly with chopsticks to ensure the surface of walnut is embed with the sweet evenly until fully absorbed

10. cool on a baking sheet, separate it when less hot

  • Wash walnut in running water, soaked in boiling water with little salt until first boil, drain and dry with paper towel
  • Spread evenly on a baking tray, put in middle rack in a preheated oven at 180 degrees and bake for about 15 minutes until golden/brownish
  • In a frying pan, put in sugar and water in medium high heat until small bubble, then turn to medium low until big bubble, the color turns to deep brown and sticky enough, add 1/2 tablespoon honey, mix well
  • Throw in walnut and butter (optional) and stir quickly with a pair of chopsticks to ensure the surface of walnut is embed with the sweet evenly until totally absorbed. Sprinkle sesame evenly
  • Cool on a sheet of baking paper, separate walnut when it is less hot
  • Consume quickly, store in a cool dry place


Tips | 心得 :
  • When sugar content turns to deep brown and sticky, take a chopstick and dip into it, then quickly put the chopstick in cold water, if sugar dissolves in water easily, then it's not yet done. Continue heating the sugar solution in low heat, and test again with a chopstick. Test the chopstick dipped with sugar content into the water, if the sugar is slightly hard and looks like crystal, then the sugar solution is done.

(A) Sugar solution :
600g  Boiling water
100g  Caster sugar


(B)
100g  Small sized sago (no need to wash)
1 small can (165ml)  coconut milk
1 teaspoon desiccated coconut (optional)

2. bring water to a boil, turn to medium heat, add sago, keep stirring with a wooden spatula

3. when it boils, add 1 cup ice water; when it boils up again, add another cup of ice water, cook until you see bubbles

4a. check to see if it is semi-translucent with little white spot inside, if yes ...

4b. cover the pot for 20~25 minutes

5. when it is completely translucent, it is cooked!

6. drain away the hot water, wash with ice water to wash away the sticky coating

7. put the drained sago in the chilled sugar solution

  1. Add sugar to boiling water, stir to dissolve, leave cool and chill for use.
  2. Bring water (2in high) to a boil in a big pot, switch to medium heat, put in sago, keep stirring with a wooden spatula.
  3. When it boils, add ice water (1 cup approx); when it comes to the second boil, add ice water (1 cup approx); cook until bubbles come up again.
  4. Wash a spoon of semi-cooked sago in running water, if the outer surface appears translucent but still has a little white spot inside, off heat, cover the pot for about 20~25 minutes.
  5. Test it again with running water, if it is completely translucent and can't see any white spot inside means it is cooked!
  6. Drain cooked sago in a colander, wash with ice water to wash away the sticky coating.
  7. Put drained sago in the chilled sugar solution in (1) above.
  8. Apportion, add coconut milk and desiccated coconut. Serve.


Tips | 心得 :

  • Soak cooked sago in sugar solution and store in the fridge may keep up to 7 days.

  • Cooking 100g sago will give approximately 410g cooked sago. Even if you cook 200g sago, there is no need to increase volume of sugar solution, i.e. same as in (A) above. Double quantity entertains more, would allow approximately 8 servings.

  • May add other fruits like honeydew melon or taro ....

1 tablespoon olive oil, divided
3 dried chili pepper
little sea salt or as needed


Seasonings :

1/2 teaspoon white vinegar (A)
1/2 teaspoon corn flour (A)
1/2 teaspoon caster sugar (A)
mix (A) for use

1 teaspoon light soy sauce (last to add) (B)

3. sliced shallot horizontally, sprinkle little salt, dry on kitchen paper

5. heat up oil, add garlic, ginger, dried chili pepper and colored ground pepper until aroma

6. add drained napa cabbage, stir fry for a minute, add sea salt, 3/4 bowl hot water just nearly enough to cover the cabbage

7. pierce the thickest part to check if it is soft

8a. add seasonings (A)

9. place pan-fried shallot on top, serve hot

  1. Prepare seasonings.

  2. Hand shred napa cabbage, wash and drained.

  3. Sliced shallot horizontally, place on kitchen paper, sprinkle little salt, fold kitchen paper to dry the shallot for a minute.

  4. Heat up oil in skillet over medium heat, pan fry shallot until golden, set aside for use.

  5. In the same skillet heat up oil, add garlic and ginger, fry until aroma. Add dried chili pepper and colored ground pepper and fry for about 20 seconds.

  6. Turn to medium high heat, fold in drained napa cabbage and sprinkle little sea salt, pan fry for about 1 minute, add 3/4 bowl of hot water, covered and cooked for about 1~2 minutes (in the interim, can turn around the cabbage).

  7. Pierce the thickest part to check if it is soft enough.

  8. Add seasonings (A), quick stir fry and mix well. Add seasonings (B), mix well.

  9. Dish, place pan-fried shallot on top, and serve hot !


*Tips :

  • Add little vinegar to napa cabbage not only increases the taste, but also helps decompose the nutrients from the cabbage be absorbed by human.

2 loosely packed cups of white rice, 1-day old (or cooked earlier during the day and let cool completely)
3 egg whites
2~3 tablespoons broccoli white, diced (or Kale Stems, Choisum Stems)
1~2 tablespoons XO sauce
1 canned (90g) crab meat, drained
1 tablespoon olive oil, divided

  1. Slightly boil the diced broccoli till soft, drained.

  2. Add oil to skillet until slightly hot, add egg white.

  3. Use a pair of chopsticks to separate the egg white. Dish aside.

  4. Wipe clean the skillet, add little oil, till hot, add XO sauce, drained canned crab meat, soft broccoli cubes, stir fry until no more excess liquid.

  5. Add rice, pan fry and mix well with (3). Salt to taste.

  6. Add egg white from (2), mix well, dish.

  7. May opt to put a spoon of XO sauce on top.


*Tips :

  • Not necessarily use 1-day-old rice. But you have to get the rice cooked earlier during the day. Wait until the rice is completely cooled before frying!

  • The key to make a good fried rice is to press the rice flat with a spatula to break the lumps firstly, and secondly to ensure every grain of rice gets heated and dried through!

  1. Preheat oven to 200°C 20 minutes before baking.

  2. Get ready the pasta sauce (or homemade tomato sauce).  

  3. Cut the eggplant into 0.5~0.75cm slices. Sprinkle both sides with salt and place slices in a colander with a dish underneath to capture liquid sweat, leave for 30 minutes. Pat dry eggplant with kitchen towel. Dip them in beaten egg, then in seasoned oatcrumbs. Place in a single layer on a baking sheet and bake in preheated oven for 15 minutes, turn, return to the bake for another 10 minutes. (Alternative: heat 2 tablespoons olive oil over medium heat, place one layer of eggplant in the pan, brown each side, repeat with remaining eggplant slices. Add additional oil if necessary.)

  4. In a 14x14cm baking dish, spread 1/2 cup of pasta sauce at the bottom, place a single layer of eggplant slices on top of the sauce, top the eggplant with 1/2 shredded mozzarella cheese, then sprinkle 1 tablespoon of Parmesan shredded cheese. This completes the 1st round layering. Make the 2nd layer, same as above procedure.

  5. Put the dish into the preheated oven and adjust it to 180°C, bake for around 20~22 minutes until sauce is bubbly and the top is getting golden.

  6. Let it sit for a few minutes before serving.

  7. Serve with salad and garlic bread!
