Bandit Chicken Wings | 土匪雞翼

土匪雞翼最重要的調味香料是孜然粉(Cumin),味道較濃,香口惹味!火候時間拿捏得好,大家都可以是土匪專家 !



Ingredients | 材料 :
yield: 10 pcs chicken wings | 雞翼 10只

(A)
10 pcs chicken wings | 雞翼 10只

(B) Seasoning | 調料 :
1 tbsp Ground cumin | 孜然粉 1湯匙
1 tbsp Hua diao qiu (Shaoxing wine) | 花雕酒 1湯匙
1 tsp dark soy sauce | 老抽 1茶匙
1 tsp soy sauce | 生抽 1茶匙
1/2 tsp Wu xiang fen (five spices powder) | 五香粉  1/2茶匙
1 tsp Caster sugar | 砂糖 1茶匙
1 tsp garlic paste |  蒜蓉 1茶匙
1 tsp sesame oil | 麻油 1茶匙
little chilli pepper, optional |  辣椒粉  1/4茶匙 (怕辣可不加)
little black & white pepper | 黑椒粉和白胡椒粉各少許

(C)
applicable quantity dark sesame | 黑芝麻

Steps | 做法 :
  1. 雞翼洗淨,用厨房纸吸乾水份,加所有(B)調料放入保鮮袋醃2小時,味道較平均;醃一晚更入味。
  2. 焗爐以230°C預熱。
  3. 焗盤上放燒烤架,排好雞翼,背部向上,掃上醃汁,放入已預熱至230°C的焗爐內,焗10分鐘,反轉雞翼,拍上黑芝麻,再焗10分鐘至金黃或熟透。取出食用
  1. Wash chicken wings, pat dry with paper towel. Add (B) ingredients to marinate chicken wings inside a plastic bag for 2 hours, best overnight.
  2. Preheat oven to 230°C.
  3. Line up chicken wings, back up, on baking tray, marinade, and put into preheated oven for 10 minutes, reverse chicken wings, sprinkle black sesame, continue baking for remaining 10 minutes until cooked or golden brown. Take out and serve.

* Tips | 心得:
  • 除了焗爐外,可以用多士焗爐,煎的或光波爐。
  • 放燒烤架上烤雞翼比較乾身香脆,或可用錫紙放焗盤上, 輕掃一層橄欖油再放上醃過的雞翼,可省卻清洗烤架的功夫。
  • In addition to oven, other options are toaster oven, pan fry or convention oven.
  • Bake chicken wings on baking tray will be crispier. Alternative is using aluminium foil. Glaze thin layer of olive oil on the aluminium paper before lining up marinated chicken wings before baking.
