Ingredients | 材料 :
  • yield: 16-20 servings 
400g  Red bean | 紅豆 (約10兩)
  75g  Dried lotus seeds | 乾蓮子 (約2兩)
  75g  Dried lily bulb | 乾百合 (約2兩)
several rock sugar | 數粒冰糖
2 pieces of dried tangerine peel|兩片陳皮 
3.5L water | 3.5公升清水

  1. 洗淨蓮子,用熱水浸泡5-10分鐘,取出蓮子心並丟棄。沖水備用。
  2. 洗淨陳皮,用熱水浸泡10分鐘,刮去瓤白,沖水,切成指甲大小。
  3. 沖洗紅豆,備用。
  4. 沖洗百合,浸泡在室溫水中。
  5. 將3.5升的水燒開。加入紅豆和陳皮至滾起。
  6. 加入蓮子,蓋上蓋子,用大火煮約20分鐘。
  7. 放入百合,蓋上蓋子,用大火煮約15分鐘。當看到大量氣泡和蓋子產生聲音,將蓋子稍微傾斜留下一小間隙,減低部分熱量。繼續用中火煮30分鐘。檢查紅豆和蓮子百合是否已經煑腍。蓋上蓋子待45-60分鐘,這樣豆類會更軟身好吃。
  8. 再開中大火,滾起加入冰糖,攪拌。蓋上蓋子待30分鐘,即可食用。
  1. Wash dried lotus seeds, soak in hot water for 5-10 minutes, take out plumula and discard. Wash again, ready for use.
  2. Wash dried tangerine peel, soak in hot water for 10 minutes, scrape off white pith, wash again, cut into nail size.
  3. Rinse red bean, ready for use.
  4. Rinse dried lily bulb, soak in room temperature water.
  5. Bring 3.5 litres of water to boil. Add red bean and dried tangerine peel on high heat until boil. 
  6. Add lotus seeds, continue boiling on high heat for about 20 minutes.
  7. Add dried lily bulb, continue boiling on high heat for about 15 minutes. When you see lots of bubbles and the lid produces sound, means it's boiling high and needs to reduce heat. Simply slide the lid and leave a small gap to allow some of the heat to escape. Continue boiling on medium heat for another 30 minutes.  Check to see if it is cooked and tender, off heat. Keep the lid on and leave as is for 45-60 minutes. This way the beans will be softer. 
  8. After resting, bring it to boil on medium high heat, add sugar, stir and taste. Put the lid on and leave it for 30 minutes then serve.

Tips | 心得 :
  • 陳皮先用熱水浸泡10分鐘,刮去瓤白。
  • Dried tangerine peel is the skin of a citrus fruit, which is dried. Soak it until tender and scrape off white pith from peel before you put into any cooking.
  • 可隨個人口味加椰漿,鮮奶或雪糕伴吃。
  • Add coconut milk, fresh milk or ice cream on personal preference.
