Ingredients | 材料 :

    Servings: 2 | 2人份

2 Bowls of steamed rice (best from overnight) |  兩碗白飯 (隔夜飯更好)
2 Eggs | 2只雞蛋
3 Shallots, sliced | 乾蔥頭3粒,切片
2~3 teaspoons Chilli prawn crunch | 香脆蝦米辣椒,2~3茶匙
few pieces small dried shrimp | 蝦米 數粒
vegetable or beans, optional | 蔬菜或豆 (可不加 )
little ham cube or prawns, optional | 少許肉粒 (可不加 )
1 Red chilli | 1只紅椒
soy sauce to taste | 少許醬油
sesame oil to taste, optional | 幾滴香油 (可不加 )

  1. 高火燒熱鍋。
  2. 倒入油,拌入切乾蔥,蝦米,香脆蝦米辣椒(或其他喜愛辣椒醬),少許鹽;煮約30秒,直到香味溢出。
  3. 加入火腿粒(或其他肉粒),雞蛋,蔬菜(可選)。拌入白飯,炒至乾身粒粒分明。
  4. 加少許醬油和幾滴香油,炒勻。
  5. 放切碎紅椒到炒飯面,趁熱食用。


  1. Heat wok over high heat. 
  2. Pour in oil, then stir in sliced shallots, dried shrimp, chilli prawn crunch (or any preferred chilli paste), little salt, cook about 30 seconds till you smell fragrance.
  3. Add ham cubes (optional), beaten eggs, vegetables (optional). Stir in cooked rice, stir fry until rice is not in lumps. 
  4. Shake in little soy sauce and few drops sesame oil (optional), toss rice to coat. 
  5. Garnish with chopped red chilli. Serve hot.
