Ingredients | 材料 :

few pieces Potato | 馬鈴薯 數個
few slices pumpkin | 南瓜 數片厚切
Shrimp and oyster, optimum quantity | 蝦和蠔 適量
Curry Paste (200g bag) | 咖喱醬 1包200g
half to whole can Coconut milk (165ml can) | 椰漿小罐裝半罐至1
little pepper, little salt, shallot, ginger, garlic, oil

  1. 馬鈴薯洗乾淨連皮煲稔,抺乾,稍涼切大角(小的切半)備用。
  2. 南瓜洗乾淨厚切,連馬鈴薯一起煎成金黃,放碟備用。
  3. 放小許橄欖油到平底鑊,放洋蔥粒、乾蔥粒,略炒至有香味,在鑊中央開個小洞加入咖喱醬,炒均勻,放入(1)和(2)炒均勻,轉放大瓦煲內,加熱水(剛蓋過馬鈴薯為準)煮滾,轉慢火煮3~5分鐘備用。
  4. 放小許橄欖油到平底鑊,放薑片、乾蔥粒、蒜泥略炒至有香味,放入滾水,滾起放入急凍蠔件、飛水後抺乾,灑上胡椒粉略為輕煎,加1湯匙肇酒,放碟備用。
  5. 蝦洗乾淨挑走蝦腸和沙袋,抺乾,灑上胡椒粉和小許鹽,煎至金黃,放大瓦煲馬鈴薯上,再放上煎好蠔件,開火加熱煮滾,關火,倒入椰漿。可配白飯或薄餅食。
